Answering my own question. An over-the-air software update request came in today. I accepted the update and it was done in a few minutes. That appears to have solved the problem.

2021 Tahoe Premier Infotainment System doesn't turn off
Hi there,
We've had the Tahoe for a few months now and generally like it. Yesterday, something changed. The infotainment system used to turn off when we parked the car and opened the door. Now it just stays on. I'm a bit worried that it will drain the battery. If I hold the radio power button down, I can manually shut it off (which is what I'm doing for now).
